Creamy Spinach & Sausage Pasta

Happy Friday!! I haven't posted a recipe in a while, and this one is a GOOD one. Like restaurant worthy.

Creamy Spinach & Sausage Pasta



Ingredients:
  • 2 sausages sliced (we used 1 portuguese hot sausage and 1 andouille)
  • 1 lb of pasta
  • 1 bag of fresh spinach
  • 4 cloves of garlic, minced
  • ¾ tsp crushed red pepper flakes

For sauce:
  • 1 C Parmesan cheese, grated
  • 2 eggs
  • 3 - 4  tbsp all-purpose flour
  • 2 tbsp white wine
  • 4 tbsp milk
  • 2 C of pasta water
  • Salt to taste
Instructions
1. Cook the pasta and reserve 2 C of the water when draining.
2. In a large pan, cook sausage, then saute garlic and spinach in olive oil. Add salt and crushed red pepper.
3. Add the pasta to the the pan.
4. Whisk 2 eggs into the pasta water and add it to the pan.
5. Sprinkle the flour over the mixture and mix until the sauce starts to thicken.
6. Add the milk, parmesan cheese and white wine. Mix well and simmer until the sauce is thick and creamy (about 3-5 minutes).
7. Add salt to taste.

This was sooo good and was a great week night meal. Plus it made for awesome leftovers the next day! :)

  1. Sounds delish! I made something similar to this except I used chicken sausage, kale, and roasted yellow peppers. Then I just used some of grandma's red sauce!
